Yellow Belly: Unique Concept, Done Right

After 18 months of following the food truck scene, I have learned to quickly identify the trucks that are doing it right from their first day out and those that are going to take some time to find their groove.  Yellow Belly is one that you can tell his doing it right, from the beginning. 


Yellow Belly is a unique concept...everything is based around the yellow tomato. When I first heard about that idea  I was not sure how you could successfully build a menu around one specific and not commonly used ingredient.  After having visited the truck several times, they way they do it is interesting and very tasty.


The "Flying Swine" is Yellow Belly's version of pork "wings". The pork pieces are "on the bone" and have a moist, rich flavor. You can get the Flying Swine cooked in barbecue sauce with goat cheese crumbles or garlic pepper sauce with bleu cheese crumbles. Both are very flavorful and filling. The pork sits on a bed of fresh greens that has been tossed in yellow tomato vinaigrette  I am not too proud to tell you that I made sure to eat every drop of the vinaigrette  This truck is going to be famous for its sauces, every one of them is above and beyond what a sauce or dressing should be, both in flavor and texture.


My favorite item from Yellow Belly has to be the Sweet Potato fries, with the side of yellow ketchup.  The fries are tossed with lime, garlic and herb, after frying. They are more soft than crispy and they are good! As good as they are, the star of this dish is the yellow ketchup. It is sweet but also tangy. It truly is the best thing I ate last week.


The Yellow Submarine, a meatball sandwich is a filling, tasty option. Underneath that provolone cheese are several meatballs that have been topped with yellow tomato marinara and sweet peppers.  I had this sandwich on a really cold day and it was warm and the marina was sweet and full of flavors of the tomatoes, the peppers and spices.  If you are a fan of meatball sandwiches, this is a great one.


When I posted a picture on Instagram showing that I was eating at Yellow Belly, another food truck owner sent me a message and told me to get the BLYT sandwich. If you don't know, when a food truck owner suggests something off another truck, it is a guarantee that it is going to be very good. The BLYT, with its candied bacon, lettuce and yellow tomato did not disappoint! The saltiness of the candied bacon matched well with the sweetness  of the tomato and the aioli dressing pulled it all together on a roll.

I am very impressed with almost every aspect of Yellow Belly. The truck wrap is one of my favorites, it catches your eye and you immediately know what the truck is serving. The food is unique but not so out of the ordinary to turn away those who prefer traditional foods.
