One of the things I have enjoyed most about the food trucks is meeting people, not only the other customers but those who are bringing the trucks to life each day. These men and women are incredibly passionate about what they are doing and the food they are serving. I was also noticing that they all had a story of how their truck came about and how their life evolved in to being a part of one of the fastest growing small business concepts, not only in DFW but in the US. From time to time, I will share these stories in Truck Talk Tuesday.

Question 1: What did you do before you were a food truck operator?
Answer 1: I bought and sold residential properties. I still have my own real estate company and am a real estate broker.
Question 2: How did you come up with the name of your truck?
Answer 2: Cajun Tailgators- I met my husband at LSU and we had the most fun at the LSU tailgates before the football games.
Question 3: Describe your typical day.
Answer 3: There isn’t a typical day with us anymore. Its crazy ..but fun!
Question 4: What is your favorite menu item?
Answer 4: The crawfish pistolette. I love seeing the customers reactions when they eat one. It is so different that what people are used to.. and its so good!
Question 5: What has been the biggest reward of having a food truck?
Answer 5: Owning your own business and watching it grow, we get to go to so many great events throughout DFW, and I get to meet and chat with our customers. I have met some great people while working in the food truck world. We have a little food truck family.
Question 6: What has been the biggest challenge of having a food truck?
Answer 6: Hands down..not enough hours in the day. I run the truck, schedule the events, prep the food, etc…. and I am a Mom to my three year old and my 1 year old little boys!
Question 7: With so much of your days and nights being spent on the truck, have you found a personal life balance?
Answer 7: Ha…not yet. Read the answer to #6.
Question 8: You spend most days on the food truck, where can we find you when you aren’t on the truck?
Answer 8: Just spending the days enjoying my family.
Question 9: Its been difficult to find authentic Cajun food in Dallas, how has your truck been received by those who grew up in South Louisiana?
Answer 9: The positive response is what keeps us going. Our crawfish pistolette was voted #34/100 must eat foods in Dallas after being open for only 3 months at the time. We don’t take any shortcuts with our food and we make it all from scratch but the bread. We ship that from Gambinos in New Orleans.

Answer 10: All the surrounding Dallas cities allowing food trucks to sell without it being a special event. We would love to be able to sell in Southlake, Keller, Frisco, Plano, Allen and McKinney.
