Few foods evoke as much discussion and passion in Texas as barbecue. Everyone has their favorite ways to prep the meat and everyone has strong feelings about where to find the best brisket. When Oink & Moo BBQ hit the streets of DFW, I wasn't sure how they would fare....could you take Texas' favorite food to the streets and make it work?
Before I talk about the meat, I have to comment on this truck. It is my favorite wrap of any DFW truck. I love the visual of walking through the screen door to get to the woodpile to reload the smoker. When you see this truck, there is no doubt what they are serving. I love it!
I try to visit a truck twice before I blog about it in order to get a full picture of the consistency and to sample a couple of items. Oink & Moo gets the record for visits; I've been to their truck four times. Not because there was something to question but because it is so good and they rotate the menu weekly, so there is a lot to sample. Even in four visits I haven't tried everything...yet.
Some of the items of Oink & Moo's menu:
Chicken Fried Brisket - I admit, this one is different. The brisket is very tender and the basting of the "chicken fried" part was very flavorful. I don't know that I loved this enough to have it again but I'm not a big fan of chicken fried anything. If you are a fan, you will probably love this. The gravy was smooth and peppery and a great compliment to some of the best handcut fries I have had ever.
Brisket - If "plain" brisket is more your thing, Oink & Moo does it well. The brisket almost melts in your mouth, it is so tender. The rub used on the brisket stays around after cooking and gives the meat a full, slightly peppery flavor. The brisket comes with a side of sauce, a choice of mild or spicy. The mild is slightly sweet and full of flavors. The spicy is my favorite; it has enough heat from pepper and other spices to warm your tongue. It matches well with the flavors of the brisket without over powering it.
Ribs- Another stellar item from Oink & Moo is their spare ribs. Fixed St Louis style, these pork ribs practically fall off the bone and in to your mouth. The smoky flavor lingers but is not too heavy. An order comes with 3 ribs and a side of sauce.
Oink & Moo also has a variety of side items that rotate including the previously mentioned fries, bacon mac & cheese, beans and coleslaw. I've had them all and the bacon mac & cheese and the fries are stand outs. The coleslaw has a vinegar base that will be refreshing on a hot summer day.
Every time I have visited this truck I have walked away thinking it was better than my last visit. With a concept that is judged pretty harshly in Texas, Oink & Moo holds their own well.
